Grilled Zucchini and Summer Squash
Super easy and super tasty! Great for the summer when you have too many giant zucchinis or squashes around. Grilling it over charcoal is best, but it tastes great broiling in the oven or using the frying pan. This recipe I used the oven to grill the zucchini.
Background: We always grow zucchini in our garden in Ohio and they get really HUGE in the summer. One simple way we deal with them is to just slap them on the grill with herbs and olive oil! The other way is to grate and use in zucchini bread ;)
- Zucchini or summer squash (1 large)
- Salt (a few pinches)
- Pepper (as needed)
- Thyme, cumin, or other herbs of choice (to taste, optional)
- Olive oil or other oil (1-2 Tablespoons)
Cut zucchini or squash into 1/2 inch or 2cm thick slices.
Brush pan and both sides of zucchini/squash with olive oil. Sprinkle both sides with herbs, salt & pepper.
Broil or grill until one side begins to brown then flip over and grill the other side. Each side might take 5-8 minutes depending on how hot your broiler or grill is.
They are done once the center of all the zucchini/squash slices are very soft and moist. Sprinkle more salt & pepper to taste.
