Eggplant and Green Pepper Stir Fry
Green pepper tossed with eggplant stir-fried in soy sauce and topped with shavings of dried bonito.
Background: It is a dish that my mother cooked always used to cook.

Serves 2
- Eggplants (2)
- Green peppers (2)
- Dried bonito flakes (katsuo-bushi) ( adjust to taste)
- ★ Soy sauce (1 tablespoon)
- ★ Sesame oil (1 tablespoon)
Preparations

Step 1
Cut eggplant and a green pepper into slices. Add oil into a frying pan and stir fry the vegetables.

Step 2
Put stir-fried vegetables, soy sauce and bonito flakes in a bowl and mix well.

Dish out and enjoy.
